Lime Chicken Tacos with Avocado Sour Cream

Ingredients
4 boneless, skinless chicken thighs or 2 large chicken breasts
1/2 tsp salt
1/4 tsp pepper
1/4 tsp chili powder
2 large limes, juice and zest
2 Tbs vegetable oil
1/2 cup chicken broth
1 avocado, mashed
1 cup sour cream
2 Tbs heavy cream
1/4 cup cotija cheese, crumbled
For serving: sliced avocado, lime wedges, flour tortillas, chopped tomatoes or pico del gallo
Directions
  1. Place chicken on a plate. In a small bowl combine the salt, pepper and chile powder. Season the chicken on both sides. Squeeze the juice of 1 lime over both sides of the chicken. Marinate for 30 minutes.
  2. Preheat oven to 350 degrees. In a skillet over high heat, add the oil. Sear the chicken for about two minutes on each side until golden. Squeeze another 1/2 of a lime over the chicken. Add the broth to the bottom of the skillet. Sprinkle the chicken with 1/2 of the zest. Place in the oven until chicken is cooked through.
  3. To make the sauce, mash the avocado in a bowl. Add the juice from 1/2 a lime, sour cream and heavy cream. Stir to combine. Taste for balance, add salt or more lime juice, if necessary. Top with some of the zest.
  4. Remove chicken from the oven and slice. To serve, top with remaining zest and the cotija cheese. Serve with sauce, lime wedges, avocado slices, tortillas, chopped tomatoes and lime wedges.
